Good morning! Today I don’t have a recipe, but I do have pictures. And the pictures are of roasted vegetables. I’ve been doing a lot of roasting lately (there’s more to come!). But today I wanted to share some pictures I took while my mom was in town. One night for dinner she made roasted cauliflower, zucchini, squash, and cherry tomatoes. The reason I don’t have a recipe for it is because we did a little experimentation. She was excited to try out the collection of Laconiko Olive Oils that I have and mixed several together to toss the vegetables in. Unfortunately I do not know which she used! Not to mention I wasn’t watching when she threw together several different spices. This is how my mom cooks – she doesn’t measure. She knows recipes by heart and just tastes to make sure it’s right. Or she throws stuff together on a whim, and tastes it to make sure it’s right. That comes from lots of cooking experience. But results in no recipe for me!
My mom also has phenomenal slicing skills. She can slice and dice faster than anyone I know.
Here she is slicing up the zucchini.
She added the tomatoes last so she wouldn’t squish them when she tossed the marinade on the rest of the vegetables.
Here’s her concoction…
I think she may have used some Lemon Pepper seasoning? And maybe rosemary or thyme?
And now for the olive oil testing.
She grabbed several bottles and sniffed them all and used more than one, but I don’t know which. I was too busy behind the camera!
You really can’t go wrong with Laconiko’s olive oil, there are so many different types.
Here are the vegetables with the olive oil mixture and some balsamic vinegar.
She tossed them on a baking sheet lined with tin foil.
And then she added the tomatoes.
Whatever ended up in the dish, it was delicious, as are all of the things my mom cooks!
