I mentioned in my last post that I have been eating a lot of vegetables lately to try to lose some pounds. One of the salads that I’ve been eating is a simple garden salad with roasted squash. The roasted vegetables help spruce up the salad and add great flavor.
I bought some squash and zucchini from the farmer’s market and washed and dried them.
Then I chopped them into similar bite sized pieces and and tossed them in olive oil, salt, and pepper.
I’ve roasted vegetables with other seasonings, but sometimes something as simple as this can be amazing.
I served the squash both on top of a simple garden salad, and on the side of the same salad. The salad was made with mixed greens, grape tomatoes, cucumbers, red onion, chickpeas, and pepperoncinis.
Then, I topped the salad with Laconiko’s Basil Olive Oil, and a Pear flavored Balsamic Vinegar.
