Pumpkin Cream Cheese Roll and Pineapple Casserole

A friend of mine invited a whole bunch of people over for a Friendship Thanksgiving, pot luck style the weekend before the actual holiday. I decided to make a Pumpkin Cream Cheese Roll and a Pineapple Casserole.

I’ve never made a roll or jelly roll before so I was nervous about whether or not this would work. What you see here is the cake with the cream cheese frosting before I rolled it. All the white stuff on the towel is powdered sugar to help the cake not stick to the towel.

Here’s the final product after I kept it wrapped overnight.

 Next I made a Pineapple Casserole. I got the recipe from a family friend that made it for Christmas several years ago. I have never made it and decided this would be a good chance. It’s full of sugar and butter so I don’t think I’ll ever try to make it again but for a group of approximately 20-30 people I figured it would be good.

It’s a sweet and salty dish due to the pineapple, sugar, butter, and Ritz crackers crumbled on top.
